Breakfast was an absolute disaster this morning. I’m trying to be open minded and eat new foods, but I cooked up some proper crap today.
1. Breakfast quinoa.
I love quinoa. But I love it at dinner time, with vegetables. Quinoa for breakfast (always recommended on the back of the packet) always struck me as a bit bizarre. The following recipe managed to seduce me and I cooked it up after an 8am threshold session.
1/4 cup quinoa
1 scant cup apple juice
1/2 tsp cinammon
handful of walnuts
Bring quinoa, cinammon and apple juice to the boil and then simmer until cooked.
Add the walnuts.
I managed about 3 and a half spoonfuls of this bizarre grain gruel before I admitted defeat and threw it away (I hate waste…).
Immediately following the apple/quinoa disaster I decided to revert back to my usual breakfast pancakes. I was craving something new though, something exciting. After reading about its superiority to peanut butter (which I hate) in Runners’ World I bought a jar of almond butter last week. This is it, I thought. I’m pulling out the big guns: Almond butter and banana pancakes.
2. Almond butter and banana pancakes
Wholegrain pancakes, topped with almond butter (overpriced from your nearest middle class wholefood convenience store), and chopped banana.
It was gross. I even added some sugar and rolled it up into a fruit kebab, but it still tasted like feet. What a waste…
By this time I had less than 15 minutes left in my scheduled breakfast/shower time slot. My attempts to be healthy were becoming terribly inconvenient. I made a second batch of pancakes.
3. Tried and tested wholegrain pancakes topped with fruit and yoghurt
Why try and reinvent the wheel? Fruity, yoghurty pancakes are delicious and filling and wonderful.
